I want to colour my .xyz data by distance from the center.
How can I do that in Cloudcompare or with another app?

How do you define the center?
Anyway, one way is to create a point at the center (Edit > Cloud > Create single point cloud), then compute the distances between this single point cloud and the other cloud (the real one). Then you can setup the display of the distances (change the color scale, the scalar field display paramerters, etc.) and eventually convert the false distances to RGB colors.
The ability to create a single-point cloud is in the 2.12.beta version. You can simply create a text file with the point coordinates and load it if you want to use an older version.
