I have created a plane (Edit > Plane > Create) and would like to resize the dimensions, but so far have only been able to adjust the height and width of the box (X, Y) by right-clicking on the plane and selecting edit. Is there a way to adjust the plane along the z-axis as well?
Context:
I'm trying to visually compare two planes: one fit to a traced structure (Plug-ins > Compass > Trace Tool, Edit > Planes > Fit) and the other created manually. Essentially I'd like to be able to adjust the height, width, and depth of the box constraining the created plane.

Not sure about the "depth", but if you want to translate the plane along its 'normal' direction, then you'll have to do it manually (with the 'Edit > Translate / Rotate' tool) or via the 'Edit > Apply transformation' one.
The issue is that there's no built-in mechanism to constrain the translation along the plane normal direction... By default you can only constrain it along the default X, Y and Z directions.
